Smitten Kitchen's Goat Cheese Salad Topper
Warm, crisp and a little melty -- salad croutons like you've never had 'em. Makes 4.
4 oz Lost Ruby Farm Goat Gouda, coarsely grated
4 oz Lost Ruby Farm fresh chevre, softened
1 Tbsp all-purpose flour
1 large egg
1/4 cup panko breadcrumbs
1/2 teaspoon coarse or sea salt
Olive oil, for frying
Freshly ground black pepper
Mash together cheeses in a bowl, mixing until combined. Form the mixture into four balls then smoosh each slightly into thick patties. Arrange three small dishes for dredging stations: Place the flour in the first dish, beat the egg lightly in the second dish, and mix the breadcrumbs and salt in the third dish. Heat a healthy slick of olive oil in a small skillet over medium heat. Take one cheese patty and dip it (one side, then the other) into the three bowls in order. Once pan is hot, fry each patty until golden and crispy, about two minutes per side. It's going to get melty (I'm not sorry!) and seem pesky to flip once warm. I found using two forks made this easy-peasy. Briefly pause the crouton on paper towels to drain excess oil, before landing it on top of your salad of choice, then finish the whole thing with freshly ground black pepper. Repeat with remaining cheese patties. Eat at once.
Lost Ruby Farm Cheesecake
Because this recipe uses a lot of goat cheese, we are specifying Lost Ruby Farm chevre: We put a LOT of effort into making sure our chevre is not "goaty." (Can you imagine cheesecake that tastes like a billy goat?!) Make one 9-inch cheese cake/pie.
8 oz Lost Ruby Farm chevre
½ c sugar
1 lemon (zested and juiced)
1 t vanilla
4 eggs, separated
2 T flour
1 9-inch prepared graham-cracker crust
Preheat oven to 350F
Whip egg whites until stiff but not dry. Set aside.
Beat goat cheese, sugar, lemon juice, zest and vanilla together. Beat in egg yolks 2 at a time,
incorporating thoroughly before adding the next two. Beat in flour at low speed.
Beat 1/3 of egg whites into cheese mixture, then fold the rest in gently with a rubber scraper.
Gently spoon cheese mixture into crust.
Bake at 350F about 25-30 minutes, until a knife inserted in the center comes out clean.
Serve with fresh fruit.
